Mexican Decaf

Mexico Decaf Mountain Water Process is a limited-edition, fully traceable decaffeinated coffee, developed by Exportadora de Cafe California (ECC). Grown in Frontera, Chiapas, in the Sierra Madre mountains, this coffee shares the same microclimate as the Huehuetenango region. The smallholders who produce this coffee are part of the global NKG Bloom initiative, which offers customized services like financing, high-quality inputs, seedlings, agronomy and business training, information services, market access, and new coffee technologies.

This coffee is named after the small porcupines that inhabit the area. At night, these creatures can be seen foraging in the treetops around the plantations

Producer Information

Mountain Water Process is an indirect decaffeination method used for all our MWP decafs from Descamex. This process uses pure water from Pico de Orizaba, the highest mountain in Mexico. It starts with a chemical analysis to determine optimal conditions. The beans are then steamed and prepared for extraction using a water-based saturated solution. This solution effectively removes caffeine while preserving the coffee's flavor compounds.
